
Serves 8 to 10
INGREDIENTS
2 pounds honeycomb tripe, rinsed and cut into bite-sized pieces
6 cups water
2 medium onions, finely chopped
4 cloves garlic, minced
1 teaspoon crushed red pepper flakes
1 teaspoon chili powder
1/2 teaspoon black pepper
2 teaspoons salt
1 teaspoon dried oregano
1 15-ounce can hominy
1 bunch cilantro, chopped
2 tablespoons fresh lime juice
DIRECTIONS
1. In a large pot, place tripe, water, onions, garlic, red pepper flakes, chili powder, black pepper, salt and oregano and bring to a boil. Cover, reduce heat and simmer for two hours, periodically skimming off the grease that rises to the top.
2. Add hominy cover again and cook for another 20 minutes. Remove from heat, and stir in cilantro and lime.
