Peanut Butter, Banana and Bacon Sandwiches

Serves 4

INGREDIENTS
8 slices bacon
8 slices thick whole-grain bread
2 bananas, sliced
4 tablespoons peanut butter

DIRECTIONS
1. Heat a medium skillet over medium-high heat. Add bacon and cook until crispy, flipping once, about 6-8 minutes. Leave bacon grease in pan, and set bacon on paper towels to absorb excess grease.

2. Spread peanut butter on all 8 slices of bread. Top with banana slices and bacon. Close sandwiches.

3. Heat remaining bacon grease over medium-high heat. Cook sandwiches on each until golden, about 2-4 minutes.
