Chocolate Chip Day

Orange Chocolate Chip Muffins
Makes 12 muffins

1/2 cup unsalted butter, softened
2/3 cups granulated sugar
2 large eggs
2 teaspoons fresh orange juice
1 teaspoon orange zest
1 cup whole milk
1 teaspoon vanilla extract
2 cups all-purpose flour
1 tablespoon baking powder
1/4 teaspoon salt
1 cup semisweet mini-chocolate chips

1. Preheat oven to 350 degrees. Line muffin tin with paper liner cups, or coat with non-stick spray.

2. With an electric mixer, cream together butter and sugar until light and fluffy. Add eggs, orange juice, orange zest, milk and villa extract and beat until smooth.

3. Sift flour, baking powder and salt. Mix into wet ingredients in thirds until just incorporated, being careful not to over mix. Fold in chocolate chips and fill each muffin tin about 2/3 full. Bake in the center rack of the oven until lightly browned and a toothpick comes out clean, about 15-18 minutes. Cool for five minutes in the pan and then remove to a wire rack.
