Hanukkah (12/11/09 to 12/19/09)
Sweet Potato Latkes
Makes 15
INGREDIENTS
1 pound sweet potatoes, peeled and grated
4 scallions, chopped
1/3 cup all-purpose flour
2 large eggs, beaten
1/2 teaspoon salt
Fresh ground pepper
1 cup oil
Applesauce, for serving
DIRECTIONS
1. In a large bowl, mix together potatoes, scallions, flour, eggs, salt and pepper.
2. Heat oil in a wok over medium-high heat. Working in batches, form 1/8 cup of dough into a ball, flatten and fry until golden. Drain on paper towels.
3. Serve with applesauce.
