Labor Day (09/07/09)

Ultimate Veggie Burgers

Makes 8 burgers


2 tablespoons olive oil

1 cup finely-chopped white onion

2 cloves garlic, chopped fine

1/2 cup grated carrot

2 cups cooked lentils

1 tablespoon sunflower seeds, lightly toasted

1 tablespoon finely-chopped parsley

1/2 cup panko

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoons soy sauce

2 eggs, beaten (If making vegan burgers, substitute 2 tablespoons finely-ground flax seed dissolved in 6 tablespoons of water)


1. Heat olive oil in a skillet over medium-high heat. Sauté onions, garlic and carrot until soft, about 6-8 minutes. Cool.

2. Mix remaining ingredients in a large bowl. Mix in sautéed vegetables. Form into 8 patties. Broil or grill, 4 minutes each side. If grilling, cook over aluminum foil. Serve on hamburger buns with desired condiments.
