National Bosses Day (10/16/09)

Oatmeal Chocolate Chip Cookies

Makes 2 dozen


1 cup brown sugar

1 stick butter, softened

1 egg

1 teaspoon vanilla

3/4 cup all-purpose flour

3/4 cup whole grain pastry flour

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

3/4 cup quick cooking oats

1 cup dark chocolate chips


1. Preheat oven to 350 degrees.

2. In a large bowl, beat the brown sugar and butter until fluffy. Beat in the egg and vanilla.

3. In another bowl, sift together the flours, baking soda, baking powder and salt. Add to wet ingredients in three batches, stirring to combine each time. Stir in the oats and the chips.

4. Line a cookie sheet with parchment and drop batter using a spoon. Bake for 8 – 10 minutes or until golden brown. Cool on cookie sheet for 5 minutes and then transfer to wire rack to cool completely.
