Nebraska Day (03/01/10)

Steakhouse Dinner
Serves 2
INGREDIENTS
Steak
2 boneless strip steaks, 1-inch thick and trimmed of fat
1 tablespoon unsalted butter
1 teaspoon salt
1/2 teaspoon black pepper
Creamed Spinach
1 tablespoon unsalted butter
1 tablespoon all-purpose flour
1/2 cup heavy cream
1 pound fresh spinach, roughly chopped
1/2 teaspoon salt
1/4 teaspoon pepper
DIRECTIONS
1. Pat steaks dry with paper towels and then season all over with salt and pepper.
2. Heat a medium skillet over medium-high heat. Add steaks and cook, turning once, until browned, 8-10 minutes for medium-rare.
3. Remove steaks from pan and cover loosely with foil for 5-10 minutes.
4. In a medium saucepan, melt butter over medium heat. When melted, add flour and stir until smooth, about 1 minute. Add cream and reduce heat until mixture thickens, about 2 minutes.
5. Add spinach, salt and pepper to the mixture cover and cook until spinach is wilted, about 1-2 minutes. Mix well and serve.
