Weird Al Yankovic's Birthday (10/23/09)

Fried Bologna Sandwich

Serves 1

INGREDIENTS

1 tablespoon olive oil

4 slices bologna

2 slices thick bread

1 tablespoon butter, softened

2 slices fresh tomato

Yellow mustard

Salt and pepper to taste

DIRECTIONS

1. Make a small cut in the center of each bologna slice, to keep it from curling up during cooking. Heat olive oil in a medium skillet over medium heat. Fry bologna slices until lightly browned on each side. Remove bologna from pan.

2. Butter bread slices on one side and add them to pan, butter side down. Cook until buttered side is lightly browned.

3. To assemble, spread mustard on the uncooked side of both slices of bread. Top with bologna slices, tomato and a pinch of salt and pepper. Serve warm.
